Rice Cooker Rice & Beans

Here's the latest installment of Meal Mondays.   Free time is scarce after a new baby arrives and making a healthy meal can seem daunting when you are juggling the responsibilities of caring for a newborn.  

So this is my list of meals that:

  • Can be prepared before baby arrives and frozen
  • Can be easily & quickly prepared in a pinch 
  • Could be doubled without hassle so you that you can eat some now and freeze some for later
  • Are healthy & filling

This week's recipe?  Rice Cooker Rice & Beans.  A few weeks ago I posted this recipe for spiced lentils & rice and was astounded at how easy it was to prepare.  So I started searching for other recipes which are that simple but still tasty and healthy.  I was surprised to find quite a few.  There are always a few days during the week (Tuesdays & Thursdays for us) when there just isn't as much time to spend preparing our dinner.  So these recipes are perfect for those days.     

Rice Cooker Rice & Beans

cup uncooked rice
1 (10 ounce) can diced tomatoes
1 (14 1/2 ounce) can chicken broth
1 (15 1/4 ounce) can black beans
1 (14 3/4 ounce) can sweet corn 

 

Drain the tomatoes, beans & corn.  Place in a rice cooker with rice and broth.  Start your rice cooker.  That's it.  I added some garlic, red pepper flakes, paprika, cumin, salt & pepper.  Without the spices, I do think it would be quite bland.  I wrapped these in some tortillas and topped them with cheese and avocado to make big burritos.   On it's own, it would make a good side dish for fajitas or other mexican meals.  If you eat meat, I read that some folks like to add chicken or sausage to make it a main course.
