Couscous Salad with Corn & Bell Pepper
I stumbled across this recipe on epicurious last week and thought it would be a good one to post here for meal monday. It's very simple and very tasty. An easy option for those first weeks after your baby arrives.

Here's what you need:
- 2 Tbsp olive oil
- 3/4 c fresh corn (cut from about 2 ears)
- 1/3 cup finely chopped red onion
- 1/3 cup finely chopped red bell pepper
- 1 garlic clove, minced
- 1/4 teaspoon ground cumin
- 1.25 c water
- 2/3 c couscous
- 2 teaspoons red wine vinegar
- 1/4 c fresh chopped cilantro
- cayenne pepper, optional
Here's what you do:
- In a heavy skillet, heat 1 tbsp oil over moderately high heat until hot but not smoking.
- Saute corn, stirring, until golden
- Add onion, bell pepper, garlic, cumin and 1/4c water and cover over moderately low heat, stirring occasionally, until bell pepper is crisp tender
- While vegetables are cooking, in a small saucepan bring 1 cup water to a boil and stir in couscous and a pinch of salt. Cover pan and remove from heat. Let stand 5 minutes and then fluff with a fork.
- In a bowl, whisk together vinegar, remaining tablespoon oil, and salt & pepper to taste.
- Combine vegetable mixture, couscous, coriander, cayenne, & dressing. Toss to combine well.
My notes:
- I used fresh lemon juice instead of the vinegar
- After cooking the vegetables, I would drain the 1/4 cup of water. I wasn't sure if I was supposed to do this or not so I left it in but I think it made the salad a little too wet.
- Some reviewers suggested serving this as a side with grilled chicken. So that might be a good pairing. Given that we are (mostly, sometimes, when we're in the mood) vegetarians, we just had the salad as our main course.
